Meatless Monday: Hearty Casseroles to Warm the Soul

Hot from the oven, casseroles take the chill off an autumn night.

Going vegetarian every day or just on Meatless Monday doesn't mean having to deprive yourself. Salads of all sorts are great, but they're not the only game in town. And with an autumn chill in the air, it's time to indulge in satisfying comfort foods.

A casserole is just the ticket.

Fresh from the oven, gooey with creamy, tangy goodness, a cheesy casserole warms the soul. They're easy to serve, and appealing to kids and adults alike.

Looking for south of the border flavor? Mexican Rice with Salsa and Wisconsin Cheeses is a snap—just switch out the chicken broth for vegetable broth and you're good to go. Make it a fiesta with Poblano Chile Tostadas.

For my money, there's nothing better than a baked macaroni and cheese casserole. This one features cheddar and asiago cheeses, and takes less than an hour to get on the table. For a tasty twist, give Mediterranean Macaroni and Cheese a try—you'll just take that itty bit of prosciutto off the ingredients list.
