Meatless Monday: Pasta, Pizza, and Pancakes with A Corny Twist

We're kicking off Vegetarian Awareness Month with some great recipes.

Happy World Vegetarian Day, the official start of Vegetarian Awareness Month!

What better time to try something new? To help out, we'll post Meatless Monday recipes and tips sent in by our readers—and some of our editors' favorite dishes, too— each Monday throughout October.

This week, we're starting off our celebration of meat-free meals with recipes submitted by Kelsey Morgan, who blogs about food at An Apple A Day. The “part-time cook and full-time teacher” sent recipes for seven of her favorite meatless dishes.

We could add a vegetarian option to our diets each day of the week until our next Meatless Monday!

“I've been doing Meatless Mondays for about 18 months now and am having so much fun learning how to create balanced, healthy, tasty meals without meat,” Morgan wrote in an email to Patch. ”I've added a few of my favorite links here and attached the pictures. I hope you'll find some of them worth posting during Vegetarian Awareness Month!”

Baked Penne with Zucchini, Corn and Basil

Fresh Corn Pancakes

Asparagus, Potato and Goat Cheese Pizza

Vegetables in Red Curry

Penne in Roasted Beet Sauce

Israeli Coucous with Roasted Asparagus, Artichokes, and Spinach

With meat prices expected to increase quite a bit, these recipes may come in handy -- not to mention it is a nice to add the variety to your diet.

Good call SJ. We always think about health or the environment, but saving a couple dollars is good inspiration too.

A "vegetarian" pizza is a good gateway food. Sometimes you have to ease people toward the vegetable world. Taste is a good inspiration, too. Fresh vegetables, well prepared are magnificent.
